Turkey Chili with Black Beans

Ingredients

  • 3 tablespoons olive oil

  • 1 medium yellow onion, chopped

  • 1/2 cup diced red bell peppers

  • 1 medium carrot, diced

  • 1/2 cup diced celery

  • 2 jalapenos, diced

  • 6 garlic cloves, diced

  • 1/2 butternut squash, (diced into 1-inch cubes)

  • 3 1/4 pounds ground turkey, 80/20 lean

  • 1 1/2 cups chicken broth

  • 2 1/2 pounds canned tomatoes

  • 2 1/2 teaspoons salt

  • 1 teaspoon ground cumin

  • 1 teaspoon cayenne

  • 1 teaspoon black pepper

  • 1 1/2 cups cooked black beans

Directions

  • Heat the olive oil until it starts to smoke.  Add the onions until they soften. Add bell peppers, carrots, celery, jalapeno, garlic and butternut squash. Add the turkey and cook for about 3 minutes. Add the chicken stock, followed by the tomatoes, salt, cumin, cayenne and black pepper.  Simmer for about 30 minutes. Add cooked beans and let cool down.
