Bacon Wrapped Mini Meatloaf
Ingredients
½ cup onion, diced
3 cloves garlic, minced
1 Tablespoon butter
1lb ground beef
1 egg, lightly beaten
¼ cup milk
1 Tablespoon Worcestershire
1 teaspoon Italian seasoning
½ teaspoon salt
¾ cup breadcrumbs
4 slices bacon
¼ cup ketchup
1 teaspoon brown sugar
1 teaspoon yellow mustard
Directions
- Preheat oven to 350°F. Line a baking sheet with foil. Spray lightly with cooking spray. Set aside.
- Heat butter in a medium skillet. Add onions and garlic and cook for 5 minutes until onions soften. Cool slightly.
- In a large bowl, combine onion mixture with ground beef and next 6 ingredients (through breadcrumbs) Use your hands to mix thoroughly, but be careful not to overmix.
- Form mixture into 4 equal balls. Place on prepared baking sheet. Wrap each ball with a slice of bacon. Bacon ends should overlap slightly. Secure each slice with a toothpick.
- In a small bowl, whisk together ketchup, brown sugar and mustard.
- Brush the top of each “loaf” with ketchup mixture.
- Bake for 60-70 minutes until bacon is crispy and internal temperature reaches 160°F. Remove toothpicks before serving.
