Bacon Wrapped Mini Meatloaf


  • ½ cup onion, diced

  • 3 cloves garlic, minced

  • 1 Tablespoon butter

  • 1lb ground beef

  • 1 egg, lightly beaten

  • ¼ cup milk

  • 1 Tablespoon Worcestershire

  • 1 teaspoon Italian seasoning

  • ½ teaspoon salt

  • ¾ cup breadcrumbs

  • 4 slices bacon

  • ¼ cup ketchup

  • 1 teaspoon brown sugar

  • 1 teaspoon yellow mustard


  • Preheat oven to 350°F. Line a baking sheet with foil. Spray lightly with cooking spray. Set aside.
  • Heat butter in a medium skillet. Add onions and garlic and cook for 5 minutes until onions soften. Cool slightly.
  • In a large bowl, combine onion mixture with ground beef and next 6 ingredients (through breadcrumbs) Use your hands to mix thoroughly, but be careful not to overmix.
  • Form mixture into 4 equal balls. Place on prepared baking sheet. Wrap each ball with a slice of bacon. Bacon ends should overlap slightly. Secure each slice with a toothpick.
  • In a small bowl, whisk together ketchup, brown sugar and mustard.
  • Brush the top of each “loaf” with ketchup mixture.
  • Bake for 60-70 minutes until bacon is crispy and internal temperature reaches 160°F. Remove toothpicks before serving.
