Thai Chicken Flatbread Pizzas
Ingredients
4 individual flatbreads or taco sized tortillas
2 chicken breasts, cooked. Shredded or cut into bite sized pieces.
1 Tablespoon soy sauce
2 Tablespoons water
2 Tablespoons brown sugar
1 Tablespoon lime juice
1 teaspoon fish sauce
½ teaspoon Sriracha
½ teaspoon garlic powder
½ teaspoon ground ginger
½ cup peanut butter
2 cups shredded mozzarella cheese
- For the Garnish
Thinly sliced red onion
Cilantro
Directions
- Preheat oven to 400°F
- In a large bowl whisk together soy sauce, water, brown sugar, lime juice, fish sauce, Sriracha, garlic powder, ginger, and peanut butter until smooth. Add chicken and toss until fully coated.
- Spread flatbreads on a baking sheet coated in cooking spray. Top each flatbread with ½ cup shredded cheese. Top with ¼ of chicken mixture.
- Bake for 10-14 minutes until cheese is melted and flatbread is crispy. Top with red onions, cilantro and an extra squeeze of lime juice.
