Thai Chicken Flatbread Pizzas


  • 4 individual flatbreads or taco sized tortillas

  • 2 chicken breasts, cooked. Shredded or cut into bite sized pieces.

  • 1 Tablespoon soy sauce

  • 2 Tablespoons water

  • 2 Tablespoons brown sugar

  • 1 Tablespoon lime juice

  • 1 teaspoon fish sauce

  • ½ teaspoon Sriracha

  • ½ teaspoon garlic powder

  • ½ teaspoon ground ginger

  • ½ cup peanut butter

  • 2 cups shredded mozzarella cheese

  • For the Garnish
  • Thinly sliced red onion

  • Cilantro


  • Preheat oven to 400°F
  • In a large bowl whisk together soy sauce, water, brown sugar, lime juice, fish sauce, Sriracha, garlic powder, ginger, and peanut butter until smooth. Add chicken and toss until fully coated.
  • Spread flatbreads on a baking sheet coated in cooking spray. Top each flatbread with ½ cup shredded cheese. Top with ¼ of chicken mixture. 
  • Bake for 10-14 minutes until cheese is melted and flatbread is crispy. Top with red onions, cilantro and an extra squeeze of lime juice.
